The old city of Kyoto is famous for pickles using local vegetables: Suguki, Shibazuke, and Senmaizuke. Nowadays there are many producers of Senmaizuke on the market, but it was first made by Kyoto's pickles specialists at the Tsukemono (Japanese pickles) shop Daito.
